Ingredients

  • 80 pieces 8″ flour tortillas

  • 5 packages 8 oz neufchatel cheese

  • 10 egg yolks

  • lemon zest of 5 lemons

  • 4 teaspoons salt

  • 3 tablespoon and 1 teaspoon honey

Directions

  • Preparation
  • Mix the Neufchatel cheese, egg yolk, lemon zest, sugar and salt. Store in an airtight container.
  • Cut the tortillas with pizza cuter into quarters. Store in zip lock.
  • Cooking
  • Use a tablespoon cookie spoon to scope the cheese mix on to each tortilla quarter.
  • Shape the cheese mixture with your fingers to form a rectangle
  • Cook the tortillas on a skillet until the bottom is brown. Fold the corners onto itself to form a triangle.
  • Cool the quesadillas on a wire rack.
  • Store in a zip lock.
  • Serving
  • Preheat oven at 350.
  • Line the quesadillas on a baking sheet.
  • Bake for 5-10 minutes until warm and crispy.
