Roasted Pepper Dip Over Fire

Ingredients

  • 2 yellow, orange, or red bell peppers

  • 1/2 teaspoon lemon juice

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon kosher salt

  • 1 tablespoon maple syrup

  • 1/2 teaspoon crushed red pepper

  • 1 tablespoon olive oil

  • 1/2 cup ground walnut

  • Garnish
  • 4-5 walnut, roughly crushed

  • 1 teaspoon olive oil

  • 1/4 teaspoon crushed red pepper

Directions

  • Roast the pepper over direct coal. Flip the peppers until they are completely charred. Allow the peppers to cool.
  • Peel the charred skin and remove any seeds. Finely chop the roasted pepper and crush them with a mortar and pestle.
  • In a large bowl combine all the ingredient together except the garnish
  • Make a dip in the middle and add the garnish ingredients.
